Taco Meatball Bowl

Tacos and meatballs may not seem like they go together…but trust me. These little puppies are a mash-up of tacos, meatballs, and a burrito bowl. They were even better heated up for my desk lunch the next day. And usually my intense love of burrito bowls and taco salads is solely driven by the addition of either sour cream, guacamole, or crushed Doritos. But these? I polished off almost a whole bowl at my desk without realizing I had forgotten to add the sour cream topping.

The meatballs are really easy to make. Drop all of the ingredients into a bowl and dig in! With your hands… I think meatballs must be mixed by hand.

Then form them into balls about 1-inch wide, and drop them into the oil in your heated pan. I let mine get pretty brown, so I’d have lots of browned bits on the bottom of the pan to flavor the sauce. Feel free to brown yours a little bit less.

Once your meatballs are browned, take them out of the pan and set aside. Then brown your onions, scraping up those yummy little browned bits. And once they’re soft, add in the vinegar to loosen the last of the bits and scrape up any that are still stuck.

Add tomatoes, tomato sauce, taco seasoning, cayenne, sugar, and ¼ cup water. Put the meatballs back in and let it all simmer together for 30 minutes.

To assemble, start with about ½ cup of rice. I used jasmine but brown rice would also be great! Add meatballs and sauce. Then top with your typical taco toppers!




The Recipe: Taco Meatball Bowl

Servings = 4 (4 meatballs per serving)


Ingredients

For the meatballs:
  • 1 lb ground beef
  • 1 egg
  • 1 tbsp taco seasoning
  • ⅓ cup gluten-free oats, processed into flour
  • 2 tbsp onion, finely chopped
  • 1 tbsp olive oil
For the sauce:
  • 14 oz can diced tomatoes
  • 8 oz tomato sauce
  • 2 tbsp onion, finely chopped
  • 1 tbsp taco seasoning
  • 1 tbsp white vinegar
  • ⅛ to ¼ tsp cayenne pepper
  • ¼ tsp sugar
  • ¼ cup water
To assemble:
  • 2 cups cooked rice (I used jasmine, but brown rice would also be great!)
  • 1 cup cooked black beans (optional)
  • Lettuce, shredded
  • Tomatoes, chopped
  • Shredded cheese
  • Sour cream
  • Salsa

Directions

  1. Place all meatball ingredients in a bowl. Using your hands, mix everything together until well combined.
  2. Form into approximately 1-inch balls. I divided my meat mixture into fourths and then made four meatballs out of each.
  3. Heat 1 tbsp oil in a large skillet over medium high heat. Brown meatballs on all sides, about 3 to 4 minutes per side. Remove from pan and set aside.
  4. If needed, add another 1 tbsp oil in same skillet used for meatballs. I had enough leftover from my meatballs, so I didn’t need more. Add 2 tbsp chopped onion and saute until golden and soft, about 4 to 5 minutes.
  5. Add the vinegar, stirring quickly to pull up the browned bits on the bottom of the pan. Then add tomatoes and tomato sauce.
  6. Add the taco seasoning, cayenne, and sugar. Taste and add salt or seasonings to your liking. Then add ¼ cup water to sauce.
  7. Return meatballs to the pan and simmer for 30 minutes, turning meatballs occasionally.
  8. Assemble the bowls. Place about ½ cup cooked rice in a bowls or on a plate. Top with ¼ of meatballs and sauce.
  9. Add toppings to your liking: shredded lettuce, chopped tomato, shredded cheese, sour cream, and salsa.
